Moving is for the BIRDS...

My life has been turned inside OUT with this move... Literally.. hahahaha  We've been getting stuff packed, or should I say Semi-packed up, since the movers will be doing the REAL deal later...  and you NEVER realize how much stuff you accumulate in life till you have to weed through it all.. MAN... and between doing this, looking for a NEW place to live, renting out OUR house, and showing it... I'm pooped... Not to mention, some wonderful Nigerian Missionary is also renting OUR house to unsuspected strangers, and all they have to do is wire him $500.00 NICE.... So, 1/2 the folks think WE'RE scammers and don't respond to our listing... /Sigh/

Wish us luck, and hopefully this will SOON be over...

Happy Earth Day

Happy Earth day everyone...
I would like to invite everyone to make a pledge to do something for our mother Earth today... You don't have to start this instant, but pledge to at least start by May 1. 2010... no matter how simple or complicated, every bit helps.  I am not by any means the greenest person on this beautiful planet, and have definitely done my share to get it where it is.  To my defense, I was not fully aware of the damage I was causing, but now that I know... I can not consciously keep doing the things that I'm doing and not feel guilty..

This is now my Daughters' planet, for they will inherent all of our mistakes... lol..

So, we have started simple changes, slowly and steadily, I figure I can make a difference AND at the same time, TEACH my daughters to live a little greener.

A little dazed

I've been a little distracted lately, and have been neglecting this blog. I'm sorry... It has definitely been a crazy few weeks lately.

The sale took a lot out of me.. It was a lot of stuff, and the kicker is... I didn't even get it ALL tagged /sigh/ but still managed to get enough on the floor and sold to make it worth something... I usually take the money I make from these sales and divide it evenly among the girl's two bank accounts.. I mean, it IS their stuff... I'd feel guilty using that money on something else... Besides, it always makes me feel uncomfortable when folks find out I seel their stuff... I can only imagine their thoughts.. lol.. I gave them that and now you get the money?? Maybe I'm just being paranoid.. hahaha

Besides, my goal is to have at least 1K per year in there for them.. NO, I don't make that much from just the sale hahahaha. I also contribute bi weekly amounts, and add any money they receive for Christmas, birthdays, etc. I also plan on participating in the Fall sale in September (I know, haven't even left here yet, and already planning my return  hahahaha).  So, to save some time, my plan is to upload all the stuff I plan to sell before I pack it up, and include the tag sheets in the boxes.  This way, come September all I have to do is cut and tag... Yipee!!  I DID mention it was a plan, although I AM the queen of having ingenious plans and NEVER executing them.. Blogging included..

I find myself so many times with a great idea, and prepared to share it here, only to find myself either lacking the time, lacking the energy, or honestly plain forgetting WTH I was gonna blog about... come on, just admit it, you do it too.. So, anyone out there have a handy little watch like Haselhof had in Knight Rider, were I can just record all my thoughts for the day without carrying a little manual recorder.. hahaha... So, I guess I'm forgiven???

Friendly Fish Sticks

EatingWell Fish Sticks Recipe




Ingredients

  • Canola oil cooking spray
  • 1 cup whole-wheat dry breadcrumbs, or 1/2 cup plain dry breadcrumbs
  • 1 cup whole-grain cereal flakes
  • 1 teaspoon lemon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/2 cup all-purpose flour
  • 2 large egg whites, beaten
  • 1 pound tilapia fillets, cut into 1/2-by-3-inch strips

Preparation

  1. Preheat oven to 450°F. Set a wire rack on a baking sheet; coat with cooking spray.
  2. Place breadcrumbs, cereal flakes, lemon pepper, garlic powder, paprika and salt in a food processor or blender and process until finely ground. Transfer to a shallow dish.
  3. Place flour in a second shallow dish and egg whites in a third shallow dish. Dredge each strip of fish in the flour, dip it in the egg and then coat all sides with the breadcrumb mixture. Place on the prepared rack. Coat both sides of the breaded fish with cooking spray.
  4. Bake until the fish is cooked through and the breading is golden brown and crisp, about 10 minutes.

Ultimate Nachos *

Ingredients

  • 80 corn tortilla chips, approximately 8 ounces
  • 3 to 4 jalapenos, thinly sliced*
  • 4 1/2 ounces diced red onion, approximately 1 cup
  • 6 ounces finely grated Cheddar, approximately 2 1/4 cups
  • 6 ounces finely grated Oaxaca cheese, approximately 2 1/4 cups
  • 2 tablespoons finely chopped fresh oregano leaves
  • 2 cups fresh salsa
  • 2 cups sour cream
  • 2 cups guacamole

  • can also add pulled pork, shredded chicken,  or ground beef

Directions


Set 1 of the oven racks on the lowest shelf and preheat oven to 350 degrees F.
Line a baking pan with parchment paper. Make 8 (2-inch) balls out of aluminum foil. Spray 3 wire cooling racks with non-stick cooking spray and place 1 of the aluminum balls in each of the corners of 2 of the racks.
Lay 1/3 of the chips on one of the racks. Top each chip with a jalapeno slice and sprinkle the chips with 1/3 of the red onions, and 1/3 of both the Cheddar and Oaxaca cheeses. Repeat with the remaining chips and the other 2 racks. Stack the racks on top of one another and set into the parchment lined baking pan. Bake in the oven on the bottom rack for 7 minutes or until the cheese begins to bubble. Sprinkle with fresh oregano. Serve immediately with the salsa, sour cream, and guacamole.

Low-Fat Adobo Chicken


My husband LOVES his mama's adobo, sooo with a few minor adjustments we can ALL eat it...


Ingredients

  • 3-4 lbs boneless skinless chicken breasts or pork chop/loin
  • 1 cup water
  • 1 cup apple cider vinegar
  • 1 cup soy sauce
  • 3 dried bay leaves
  • 3 cloves garlic
  • 1/2 tsp whole black peppercorns
  • vegetable oil

Instructions

  • Press garlic and crush or rough-grind peppercorns.
  • Cut meat into 1- or 2-inch cubes.
  • In a large pot, mix together water, vinegar, bay leaves, garlic, and peppercorns.
  • Add whole chicken breasts, cover, and bring to a boil.
  • Let simmer for about 20 minutes, then add soy sauce and continue simmering (still covered) another 20 minutes. At this point, if you're saving some for leftovers, set that portion aside (both broth and meat) to cool to room temperature, before transferring to an air-tight container and placing in the fridge.
  • Remove the chicken from the broth and allow broth to continue to cook boil, uncovered, until it is reduced by half (about 10 minutes, if you're making the whole recipe) to make the sauce.
  • Allow to cool.
  • Meanwhile, heat a little bit of vegetable oil in the bottom of a frying pan, and brown your meat cubes.
  • Skim any fat off the top of your broth/sauce and remove bay leaves, then add to the frying pan with browning chicken to reheat.
  • Serve over rice.

Guacamole

Ingredients

  • 2 avocados
  • 1/2 Lime, juiced
  • 2 tablespoons chopped onion
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 1 minced clove of garlic

Directions

  1. Cut the avocados into halves. Remove the seeds, and scoop out the pulp into a small bowl. Use a fork to mash the avocado. Stir in lemon juice, onion, garlic,salt, and olive oil. Cover the bowl, and refrigerate for 1 hour before serving.

Ingredients

  • 1 1/2 cups seeded, diced tomatoes
  • 1/4 cup diced red onion
  • 1 tablespoon diced jalapenos
  • 1 tablespoon minced garlic
  • Juice of 2 limes
  • 2 tablespoons cilantro, plus extra for garnish
  • Salt and pepper
  • 1 tablespoon extra virgin olive oil

In a bowl combine all ingredients.

Irish Beef Stew

Irish Beef Stew





 

Ingredients

  • 1/4 cup olive oil
  • 1 1/4 pounds well-marbled chuck beef stew meat, cut into 1-inch pieces (NOT extra-lean)
  • 6 large garlic cloves, minced
  • 6 cups beef stock or canned beef broth
  • I cup of Guinness beer
  • 1 cup of fine red wine
  • 2 tablespoons tomato paste
  • 1 tablespoon sugar
  • 1 tablespoon dried thyme
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves
  • 2 tablespoons (1/4 stick) butter
  • 3 pounds russet potatoes, peeled, cut into 1/2-inch pieces (about 7 cups)
  • 1 large onion, chopped
  • 2 cups 1/2-inch pieces peeled carrots
  • Salt and Pepper
  • 2 tablespoons chopped fresh parsley

 

Method


Heat olive oil in heavy large pot over medium-high heat. Lightly salt the beef pieces. Working in batches if necessary, add the beef (do not crowd the pan, or the meat will steam and not brown) and cook, without stirring, until nicely browned on one side, then use tongs to turn the pieces over. Continue to cook in this manner until all sides are browned, about 5 minutes. Add garlic and sauté 1 minute.

Transfer to Crock Pot.
 
Add beef stock, Guinness, red wine, tomato paste, sugar, thyme, Worcestershire sauce and bay leaves. Stir to combine. Cook on HIGH for 1 hour, stirring occasionally.

Add vegetables and butter to beef stew. Cook on low until veggies and beef are very tender, about 2-3 hours. Discard bay leaves.

Add salt and pepper to taste. Sprinkle with parsley and serve. (Can be prepared up to 2 days ahead. Cool slightly. Refrigerate uncovered until cold, then cover and refrigerate.)

Punked out!!!

Not sure how it happened.  I had made plans with my mom since last Friday, that today I was going to drop off the gremlins early this morning so that I can get some things done.  I have a HUGE list of things to do.  Also.... besides finding it hard to find the time to do it...

I'm THE queen procrastinator.. lol.. 

This morning, instead of dropping them off, I picked her up and went for a ride... In my defense, I did get a storage unit rented and that was scratched off my TO DO list.. /wink/
After their nap time, I caved a little, and dropped them off with the intention of letting them sleep over (since the NEW plan included dropping them off early tomorrow morning anyways.. I'd be saving gas right?? . hehe) ...

Came home and got busy... 

The BIG item right now is getting items ready to be sold at our local Mom's of Multiples Consignment sale.

 
I have almost 3 years of STUFF that the girls have either outgrown, or have never and will never use, and I'm ready to part with it.. /sigh/  To further assert the crown I so rightly wear ... the last day to get everything in the system is tomorrow, and I haven't even sorted 1/2 of it.  //no pressure//

My house is a war zone, with bouncy seat land mines, an obstacle course or boxes full of clothes, and let me not even begin to mention the toys... we must have 3 laundry baskets, 2 hampers, and several diaper boxes FULL of toys to be cleaned sorted and tagged... So, I thought I'd bite the bullet and go at it tonight till I couldn't keep my eyes open any longer...

Right around 1900, the itch started setting in.. That crazy little feeling like you forgot something.. That feeling you can't shake when something is missing, Kind of like when you think you've left the iron, or oven on.. RIGHT?? Do you know that feeling?  Well it REALLY sucks..
Then I realized.. I'm missing my little gremlins.. It was eating me up inside. I knew they were fine, But Mommy missed them..
So, call me a WUSS, but I broke down... I went and picked them up.. Now, I feel complete.. /wink/

Better now, and not at 0300 right?

BTW.. NO, I have not gotten back to the LARGE task at hand, and really don't feel like it either.. (sad, I know).... OH WELL!!!

Pork Meatballs in Tomato Sauce *

Meatballs with Ricotta in Tomato Sauce

Ingredients

  • 10 ounces ground pork shoulder
  • 10 ounces sweet Italian sausage
  • 2 ounces prosciutto or pancetta, minced (helps to put in freezer for 15 min first, before mincing, will make it easier to cut)
  • 4 cups cubed white bread, crusts removed first.
  • 1/2 cup chopped fresh flat-leaf parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon fennel seeds
  • 1/2 teaspoon red pepper flakes
  • 1 1/2 teaspoons Kosher salt
  • 2/3 cup ricotta cheese
  • 3 eggs, lightly beaten
  • Olive oil
  • 1 28-ounce can crushed tomatoes (high quality, either San Marzano or Muir Glen)
  • 1/4 cup chiffonaded* fresh basil leaves
  • 1/2 cup freshly grated Parmesan cheese

* if fresh is NOT available, you can substitute w/ 1 Tablespoon of dried basil...

 

Method 

In a large bowl, add the pork, Italian sausage, prosciutto or pancetta, bread cubes, parsley, oregano, fennel, red pepper flakes, and salt. Use your hands to mix until the ingredients are evenly distributed. Do not over-work.Whisk the beaten eggs and ricotta together in a separate bowl until there are no more large clumps of ricotta. Pour into the bowl of the meat mixture. Mix with your hands until just incorporated. Again, do not over-mix.

If you want, to test seasoning, you can take a small bit of the mix, form into a patty, and heat in a small skillet on the stovetop until cooked through. Depending on how this test patty tastes to you, add more herbs, chili, or salt to taste to the meat mixture. Keep meat mixture in refrigerator while doing this.


Preheat oven to 425°F. Coat the bottom of a large roasting pan with olive oil. Form meatballs in your hand, about 1 1/2-inches in diameter, using about 3 Tbsp of the mixture to form each meatball. Arrange in pan so there is some space between them. If too crowded they will steam and not brown.

Roast meatballs in the oven for about 30 minutes, turning the meatballs after about 20 minutes, until the meatballs are beginning to brown.

Remove pan from oven. Use a metal spatula to dislodge meatballs from being stuck to the bottom of the pan. Add the crushed tomatoes to the pan. Carefully cover the pan with aluminum foil (carefully because the pan is still hot!) Return the pan to the oven. Lower the heat to 300°F. Cook for an additional hour to 1 1/2 hours.

Sprinkle basil into sauce before serving.



Makes about 24 meatballs. Top with grated Parmesan.

A Date Night

Last night Hubby and I got a chance to go out.. I am truly appreciative of my mom for taking care of the gremlins for us..  Nothing super spectacular, but any time with him is amazing.  We decided to catch the 1700 showing of Date Night.  I must admit, I'm not necessary a huge fan of comedy, especially at the prices movie theaters are asking, for 2 hours of entertainment.. And it's a gamble at best.. I know I have been to quite a few less than umm let's just say good movies..
This movie was hilarious, and in good taste..



It's rated PG-13, but honestly, I wouldn't take my 13 yr old, but I can see liberal parents taking theirs.. It wasn't THAT bad, not much more than you see in an episode of CSI, or Law and Order.. It about a couple from Jersey, that go to the city for dinner, and a case of mistaken identity takes a most unfortunate spin..  I think Steve Carrell and Tina Fey can do a Kotex comercial and I'd laugh my Butt OFF..
After the flick, it was reality time.. Grocery shopping, and then off to pick up the Gremlins.. Can't escape the real world for too long..

Bareing it ALL??

The beautiful warm weather this past weekend, drove home the idea that summer is fast approaching, and that means taking a little extra care of certain areas... Now, I've never waxed... other than my eyebrows, but must admit the thought has crossed my mind a few times.  I guess I'm just a little... well, let's say shy. Not an exhibitionist by ANY means.. /giggle/

The other day I went for a quick Mani/Pedi (which does NOT happen often, but convinced myself that an hour of me time was desperately necessary), and my pedicurist asked if I also wanted a wax.. Now, before any of you get any funny ideas... I was wearing Jeans, so some inopportune stragglers did NOT prompt that suggestion... hehehhe.. How embarrassing would THAT have been? but that's another post and I'm veering off course...
I politely decline, and she reminds me that summer is coming and that they offer Brazilian.. REALLY??? I think I paused for a millionth of a second, and by the time I exhaled she had a cardboard diagram showing all the wonderful artistic designs they offered.. and YES this made me giggle too.. and then I thought of her poring the burning wax onto my skin. Holy fudge face. Then the images of her placing a strip on my (god I hate this word) labia and pulling, then putting her hand on the spot to soothe it or something. OH HECK NAAAHHHH, and WHY would people subject themselves to this regulary...
Vanity truly IS the work of the Devil, and this would probably be at the top of his list of torture methods. They should just call this the SATAN..

At this point I kinda wanted to go home... You know that awkward moment... As I could feel the pressure to say YES, but thankfully, intelligence sunk it and I politely declined..  Besides... I'd have to choose a STYLE.. lol..
"Should I keep a strip, a triangle, or take it all off?"  Honestly, I don't get the little landing strip thing. Can you imagine if we shaved our armpits, but left a strip of hair. Or shaved our legs but left a hairy triangle? Squiggly lines, Checker boards.. WHY?

I asked her, "Why do people get this done?"
"To feel cleaner," she said.
"But isn't it pubic hair's job to keep things out, in essence, to keep things clean?"
"It's like getting a haircut or highlights," she said. "You're taking care of yourself."
REALLY???

I know if you want to sell the house, you’ve got to mow the lawn, but the house has been sold. Besides, I'm not a bikini kinda gal.. I've birthed TWINS for Cruds sakes... a straggler or two would be the LEAST of my worries...

Random Thoughts Tuesday

I think I have ADHD!! I happen to have ALL of the symptoms, indicators, etc.  But I refuse to go see a doctor, primarily because I'm a HUGE procrastinator, but secondly, this isn't my first rodeo with thinking I had SOMETHING... /Sigh/ My husband swears I'm a bit of a Hypochondriac...

I'll share  a little story with you.  Way back in the day (early 90's) when my husband and I were both active duty and living in Italy, I was addicted to Prevention Magazine... This magazine is now BANNED from our household.. /giggle/
Anyhow to make a long story short... I was reading an article in the ahm ahm bathroom, and realized I had ALL the corresponding symptoms.. /sigh/  I came out of that bathroom genuinely upset, and crying.. When asked what was wrong, I replied to my caring, worried, already hugging me husband.... "I think I have Prostate Cancer." This man, whom I adore, mind you, proceeded to laugh uncontrollably.  This although funny NOW was NOT so funny then, I genuinely BELIEVED I could have cancer... Once that ..ahm ahm my husband composed himself, he explained to me how I could NOT, do NOT, and will NEVER have prostate cancer.. 

I had already written this post, but somehow blogger took it upon itself to erase EVERY single thing and auto SAVE it empty... so, I feel like this is ground hogs day... 

Nothing says random like pulling ideas out of thin air right..

I wish Google maps had an avoid the ghetto option...

Oh and that someone would invent a SARCASM font, that might keep me out of trouble.. Well, not KEEP me out of trouble (that's a task even too great for GOD), but it might help me keep a few fiends.. hehehe

Still upset my post got erased, I put a lot of thought into it, and can't seem to remember.. especially with one gremlin here repeatedly screaming "read" and hitting me over the head with a book.. 

note to self... buy ONLY soft squishy books and donate all these hard cardboard ones...

Menu Plan Monday

 Meal Plan Monday... Although I have been a big meal planner for years, never thought to actually blog about it... and why the heck not right..




Monday....................  Spaghetti and Meatballs (Crockpot)
Tuesday....................  Pork Roast (Grill) w/ Ricearoni and Potato Salad
Wednesday............. Sauteed Kielbasa w/white rice and corn
Thursday................. Cuban Sandwiches (with left over Pork) w/ home made chips
Friday....................... Fried rice and Chicken Stir fry
Saturday.................. Free Day
Sunday..................... Garlic Baked Chicken w/Wasakaka and Potato Mash

This should take the guessing out of cooking, save us some money when it comes to groceries shopping, and help me keep to the meals I CAN eat...
