Under the weather

Looks like whatever Star picked up last week has taken over our household today.  Seems both Gremlins and myself have gotten bit by the icky bug.  Unfortunately, as soon as I thought I was getting out of it on top, I get pulled back down..

Of course, just in time for the wonderful weather too, but, if I'm lucky it'll only last 2-3 days, like Star's did.... Now, if only I can get my mom to make us some Sancocho. (Dominican Stew) and just in case she doesn't get the message. (HINT HINT) I will post the recipe and maybe one of you will feel generous enough to help us out. hahahahahaha

Ingredients:

1lb of beef, preferably with bones
1 1/2 lb of fresh chicken (cut up)
1 lb of fresh pork
2-3 green plantains
1 lb of cassava or yuca*
1 lb of white yam*
1 lb of eddoes or yautia*
1/2 lb of potatoes
3 large onions
Small bunch of coriander or cilantro
2 large naranja agria** or Seville Oranges
1 tablespoon of vinegar (optional)
2 stock cubes of beef or chicken
Vegetable oil at your discretion
5 cloves of garlic
1 small portion or oregano
2 small or 1 large green peppers
1 lb of American rice
1 1/2 lbs of Spanish pumpkin
5 liters of water
salt (to taste - usually about 1-2 teaspoons)


* - You need about 3lbs in total of staple vegetables like yams or yuca, use a mix of the three listed if you can get them, or make up the total amount from what you can get. The hunting may provide to be a chore, but they are essential for the authentic taste.
** - 'naranja agria' are very sour oranges widely use for cooking in the Dominican Republic. But don't panic if you don't have 'naranja agria', you can always use a little grapefruit juice and lemon as a substitute.


Directions:

Peel your garlic cloves and place them into the mortar together with the oregano and salt, then mash them together well.
If you don't have a mortar, just crush all the above ingredients with the side of a heavy knife on a chopping board (remember to flush your board well with cold water immediately after doing this to avoid transfer of garlic flavor to things you might not want to taint, later on!)
Peel and chop the onions in quarters.
Now take all the meat and cut it into fairly equally sized pieces (for beef and pork, 4cm or 1 1/2 inch cubes - for chicken 'small joints'), if using meat on the bone, leave it on the bone for extra flavor, wash the meat well with plenty of water. It is also better if you remove the skin of the chicken and any excess fat from the other meats.
Once you have done this, place all the meat in a large bowl and 'wash' the meat again with the naranja agria or lemon juice, and drain about half the liquid off.
Once the meat is washed and ready, add the mashed combination of garlic and herbs you have in the mortar. At this stage you can add a bit of vinegar (say a good teaspoon full), some vegetable oil and half of the chopped onions (leaving the rest for later).
Now stir the meat and these ingredients well and let it marinade for about half an hour, while you prepare the other items.
Whilst the meat is resting, peel the plantain, yuca, yam, potatoes, Spanish pumpkin and eddoes.Then cut them into pieces roughly the same size as the meat 'chunks'.

Place a large pan (ideally one that's not too deep - a wide bottomed, heavy lidded, braising pan is best) on the heat with some vegetable oil, say about half a cup.
Once the oil is reasonably hot you can add the meat. Don't add it all at once.. Add it in batches to avoid loosing too much heat... Make sure all the meat is 'seized', or 'browned' on all sides...this will help keep it moist and reduce the chance of it flaking to bits during the cooking process.
Once all the meat is browned, immediately add about a teaspoon of salt and a pint of stock. Stir well.
Let the pot just come to the boil then turn down the heat and let the meat simmer, with a good heavy lid on the pot, for at around 40 minutes before starting the rest of the cooking.

After this time the meat will be more than half cooked, turn it off for the time being. Now you can start the second step.

Take another big cooking pot, quite deep this time, put it onto the heat and add three liters of water.
Add all your plantain, yuca and the other vegetables to the cooking pot together with the coriander, the rest of chopped onion and the chopped green peppers. Also crumble into the pot the other stock cube, and stir.
After heating the pot for 15 minutes, by which time it should be coming to the boil (if not already turned to simmer) carefully mix in all the contents of the meat pan. Add more water if necessary, so that all contents of the pan are just covered, and bring back to the boil before turning down to a simmering heat again (you may want to use some of the hot water to de glazethe meat pan and get ALL the flavor out of it).
From now on the Sancocho will start developing a good color and thickening. You need to check it every ten minutes to ensure it doesn't get too dry, it will have the tendency to do this as moisture evaporates and stock is absorbed by vegetables. You should add a little more water if necessary.
After about one hour or so of total cooking time your Sancocho sauce should be nicely thickened by the starchy vegetables (but not too dry) and the meats should be lovely and juicily tender (try them before you turn off the heat, and give another 10 minutes if necessary). Your typical Dominican dish should be ready to serve and enjoy.

Serve your Dominican Sancocho with a big bowl of white rice..
**Optional**slices of avocado and Gigi Gigi or hot sauce...



I guess I shouldn't complain too much If I don't get it though, quite honestly it's A LOT of work, and preparation isn't too easy. BUT.. it IS hands down the BEST sopu/stew you will EVER taste.  I may have to try it out in the crock pot... hmmmm sounds like a challenge.. (-=

Random Thoughts Tuesday

I really wish everyday was Tuesday... It's so much easier for me to randomly rant on Random thoughts than t form a full post.  I just barely have the time some days to put one together on the COMPUTER.  Have a tone running through my head all day... 
Hey, maybe I should get one of those recorders, and dictate it all day... NNNAAHHH who am I kidding, that'll just mean a bunch of empty tapes laying around, cause I'll never get to typing them up.

I'm a huge procrastinator, I start off with the best of intentions, but one thing will lead to another (and usually RIGHT in the middle of the first thing.. HA, funny how that happens)..

I also like random thought Tuesday, cause that's usually how I think.. Yeah, a little all over the place. Heck, If I don't get a shower in EARLY, it doesn't get done till LATE.. 

Speaking of no shower... Marketing of “feminine hygiene” products has reached an all time low. Just when we thought that wasn’t possible, Linger: Internal Feminine Flavoring, arrived. To top it off, these “vaginal mints” are actually just ordinary breath mints marketed as novelty items.

Which means that the FDA has no regulatory oversight and the manufacturer doesn’t have to do anything to make sure that the ingredients are safe for vaginal use. Who knows what these “mints” might do to the pH balance of your vagina! As we add Linger to the multitude of products that tell women their vajayjays need fixing, we are really starting to wonder when suppositories to flavor semen will hit the market... Or at least scent them... hahahaha 

I don't know if this happens to you, but sometimes I’ll look down at my watch 3 consecutive times and still not know what time it is.  That's why I LOVE wall clocks...



This morning I was attacked with hugs, kisses, tickles, giggles, and even got my FIRST spontaneous "I Love you Mommy"... (= 

I honestly don't know HOW I made it through those other 12,781 days of living before they were born?? 

Yes folks I was 34 years, 11 months, and 29 days. hahahahaha

GiveAway: Country Bob's All Purpose Sauce


I'm not generally a BIG sauce person, and when I was contacted by Country Bob's I was a little skeptical to try something new, especially something that boasts about being good on just about EVERYTHING.  But, I love a challenge.
We received 2 bottles of the Country Bob's Original and a pamphlet with some recipe suggestions, just to get us started.  I was a little excited, I absolutely adore cooking, and couldn't wait to try it out.  The very next day, I made a Steak on the grill, to give it a shot, and was hooked.  The consistency is like a steak sauce, so it's not too thick, and the flavor? Amazing.  Not too tart like many steak sauces, very well balanced and definitely not overpowering. It was like a compliment to the flavor instead of BEING the flavor.

Next, I tried it in my marinade when I made some baked chicken breasts, and it was divine.  I couldn't wait to use it again, and again.  Besides, if I run out of ideas, they even have recipes online.  They also offer a spicy version, BBQ sauce, and season salt, and did I mention the sauces are Gluten free? Well, they are.  The more you dig on Country Bob's the more you'll be convince this is a wholesome, family friendly, Jesus loving site, and I am impressed.

Bitter Sweet





If you were wondering why I have been neglecting you all lately???? Wonder no more... My hubby returned from Haiti on Sunday.  It was marvelous..  The girls had already begun to ask for him, religiously, which stood as my daily reminder.. Just kidding..






Homecomings are always so special.  The excitement began extra early, since I couldn't sleep all night due to a mix of anxiety and anticipation(OK it was really DST and the loss on an hour.. hahaha).










He was scheduled to arrive at 1100, so we had to be out of the house around 0930.  We set our alarm for 0600, to give me enough time to get the gremlins ready, and maybe do a little extra on me (time permitting).  Once we arrived, the girls started chanting Daddy, Daddy, Daddy, and I couldn't wipe the smile off my face.  Ok, now we wait.









Once the vehicles started coming through the gate, the butterflies in my stomach became mothras, I think my knees began shaking too.  Can you believe it, after being together almost 17yrs, he STILL has that effect on me?  OH MY!  IS THAT HIM?  I was ecstatic, I love the feeling of seeing him again after a deployment.  You can almost literally feel the weight lift, the burdens disappear, and your heart fill up again.  I was curious to see how the gremlins would react...



Star ran right to him, calling out to Daddy, and gave him a kiss and a hug. 




Luna as a little more skeptical, but after a few seconds to make SURE, she was also excited to finally see Daddy. It was awesome to see them reunited, I almost forgot MY hug and kiss.
I must admit, I am LOST without him (Make NO mistake, I am an excellent navigator, and that's not say I cannot find my way without him.. hahaha).

In all these years together, we have deployed together when I was active, then apart for periods as long as 9 months, but these 2 months have been the hardest yet.  I don't know if it was the fact that we had NO time to mentally prepare, it was just a 24hr notice, or the fact that now the gremlins actually KNOW he's gone, or the NO return date.  Probably the NO return date.  This gives you nothing to countdown to, nothing to look forward to, and no definition or time line.  Funny how the mind works..

AND NOW? He's off again... Yup, home less than a week, and off AGAIN.  To Haiti AGAIN. No return date AGAIN. So, it's just me and the Gremlins AGAIN..

To eat or NOT to eat...


Laura Cancio of Hobe Sound, FL keeps her home extremely organized. She has her family's dinners planned out on a calendar for the rest of the month, and to teach her four kids responsibility, she has a posted morning routine for her school-aged boys to follow. One of the chores includes putting their lunches in their lunch boxes.

One day, upon returning from the bus stop, she noticed her fourth-grade son, forgot to assemble and bring his lunch. She said she wrote an e-mail to his teacher asking that he not be provided snacks or lunch because she felt this would teach him a lesson about responsibility. Plus, she said, he'd eaten a healthy breakfast and he would eat promptly when he returned from school at 2:30 p.m.
The staff at the elementary school appeared to have thought differently, because he was given a lunch. Laura said when her son returned home, he asked her if what she had done was "illegal" because someone at the school had told him it was against the law not to feed a child lunch.

Cathleen Brennan of the Martin County School District issued this statement:

"Educational research clearly shows that students who are well nourished do better in school, both academically and behaviorally. As such, it is not the practice of the School District to withhold meals from students."
She retorted, "I don't expect them to agree with me, but I expect them to support my decision."


What do you think? I would have to side with the mom here. I would feel like My authority as a parent was undermined. The school system consistently expects parents to work with them and help "back THEM up". I don't think this was soooo unreasonable. I can understand if the request was for a week, or to reprimand the child in front of his peers, or something that would distract the child, and his/her classmates, but THIS? Just my 4cents...
