 Meal Plan Monday... Although I have been a big meal planner for years, never thought to actually blog about it... and why the heck not right..


With all the moving, packing, and trying to keep SOME order in the house ... Cooking seems to have slowly crawled to the BOTTOM of my list... SO, this week will be E-A-S-Y ...

  • Grilled Flank Steak (Tequilla Garlic & Asian Marinated) / Grilled Bratwurst / Rice-a-Roni / Grilled Vegetables
Tuesday
  • Baked Chicken w/Wasakaka Sauce (Dominican Style)/ Boiled Yucca w/ Sauteed Onions

  • Steak Fajitas (w/LO flank steak) / Pico De Gallo / Avocado Salad
Thursday
Friday
  • Chicken Picata w/ (LO) Pico de Gallo and Chicken 
Saturday 
  • Brother should be here from MS.. soooooo will play it by ear
Sunday
  •  Free Day

This should take the guessing out of cooking, save us some money when it comes to groceries shopping, and help me keep to the meals I CAN eat... and now every Friday, I will place the recipes in the recipe page of the blog.. in case you'd like to join us .. Bon' Appetit...Hope you enjoy!!!!

Memorial Day

As I watch my daughters play I can't help but to ponder on their future.  I assume every parent does this.. You wonder what will become of them, or better yet, what kind of adults they will BECOME.  MAN, all the possibilities.. and then it hit me like a ton of bricks... all those possibilities are available because of all the freedoms we are privy to.

I started remembering all my brothers and sisters I served along side, the ones that are no longer with us, and those that STILL serve.  I started thinking of all those that have had no sleep, are fearing for their lives, and have no relief from the heat... As I wonder what I'm serving with the BBQ this evening, and if we may need more beer, my mind goes to those that are wondering if they will ever see their families again, and if they need more amo.

Totally Satisfied!!!

My hubby took me to see Prince of Persia this afternoon, and I must admit I LOVED it....

Disney truly ROCKS!!!
Prince of Persia made me laugh, made me cry, and left me totally satisfied...
This was the first time in three years I didn't feel that empty pit of guilt after walking out of the theatre for leaving my gremlins with my mom...
This movie kept me interested from the beginning to the end.  The plot was amazing, the story line intriguing, not to mention Jake Gyllenhaal was a a a a WOW HOT!!! He definitely made me forget the Cowboy fiasco I couldn't get out of my mind every time I saw him.. hehehehe Did I mention he looked HOT?? Wait, give me a minute to compose myself.. OK..



First time in as long as I could remember that I left the theatre completely content... I could have watched another 3 hours, but didn't feel like I NEEDED it (you know that feeling don't you?) and the ending was right on point... Although my cheeks DID hurt, but from too much smiling..




Basically I'd give this movie a BIG thumbs up.. It was Aladdin, with a bit of Indiana Jones, Simbad, and heck the Goonies all rolled into one.. Never played the Game, but loved watching Hubby play.  But you don't have to be a fan to dig this flick.. I think I may go see it again..

Papa Eggs

This morning the gremlins woke up asking for Papa (Potato in Spanish) Eggs....We had folks coming to view the house at 1000 and the LAST thing I wanted was a wafting smell of eggs as soon as we opened the door (besides, we needed to do a little tidying up hehehe) , so I patiently tried to convince them to eat cereal...

Then I realized I was spending MORE time to convince them than it would have taken me to make some potatoes and eggs.../sigh/

So I got to whisking and chopping... In the meantime, put some Cinnamon rolls in the oven (I know I'm sneaky... the smell of the rolls ALONE should get me new tenants in a heartbeat.. hehehe)...

Made a yummy yummy yummy breakfast fit for two princesses, I was soooo proud of myself, and feeling that pat on the back for being a GOOD mommy, and feeding them something nourishing instead of easy... when I get a big fat cohesive NNNNOOOOOO PAPA EGGS... WHAT? you said you wanted papa eggs... NNNOOOOO NOOONNNNOOOO.. PAPA EGGS.. OK

The more I tried to reason with them, the more upset they got.. /sigh/

Then it hit me.... Last week when we were visiting the in-laws they went GAGA over my Father-in-law's scrambled eggs... and YUP you guessed it.. they call him Papa.. /sigh/ Mommy was WRONG.. not potatoes and eggs, but Papa's eggs.. FOOOYEEE..

Couldn't have come on a better day either.. funny enough today is PAPA'S Birthday.. Happy Birthday Old man.. Wish we could have been there with you.. (Mainly so you could have cooked those darn eggs)

Cheesy Penne**

 Looking to overhaul your Mac and cheese?  This is sooooooo yummy, it's like the bastard child of Macaroni and cheese and Fetuccini Alfredo... Totally not on my diet list, but worth the little cheat.. hehehehe

Ingredients

  • 4 cups fresh penne pasta
  • 1/2 cup milk
  • 2 teaspoons Dijon mustard
  • 3/4 cup heavy cream
  • 4 ounces aged English white Cheddar, grated
  • Kosher salt
  • Fresh finely ground black peppercorns

Directions

Bring a large saucepan of salted water to a boil over high heat. Add pasta, cook until al dente, and drain. Return pasta to the saucepan.
Whisk milk with Dijon in small bowl and add to the pot with cooked pasta, along with cream and grated Cheddar. Stir over medium-low heat until the cheese melts and the mixture is nice and thick. Season with salt and freshly ground pepper and serve. Happy indulging!

Slow Cooked Chili **

Slow-Cooker Chili 


 

 

Ingredients:

  • 1can cooked black beans
  • 1can cooked Red Kidney Beans
  • 1/4 cup chopped onion
  • 1/4 cup chopped green peppers
  • 1/2 cup diced green chile peppers
  • 3 tbsp. tomato paste
  • 3 to 4 beef bouillon cubes, or beef base
  • 1/4 tsp. ground cumin
  • 1 tsp. minced garlic
  • 1/2 tsp. salt and pepper
  • 1lb Lean Ground Beef
  • 1 cup shredded Monterey Jack or mild Cheddar cheese

Preparation:

Brown meat with onion and green pepper (add a little salt and pepper). Combine all ingredients except cheese and cook 6 to 8 hours on low.

Serve hot in bowls with a little cheese sprinkled over each serving.


*Many times I add some Italian Sausage ground out of casing... SUPER yummy

Ofensive REALLY???



Even more amazing than the cards and festivities this weekend was  the news.  I honestly don't watch this stuff on TV, and let's NOT get started on the bashing.. hahahaha I know I know, and  have weighed the pros AND cons, believe me, but I would rather be semi-ignorant on whats going on in the world than worried and depressed every evening before going to bed..

The only time I DO watch it is when I visit the in-laws, that's ALL that's on TV.. lol..  This weekend wasn't any different, and quite frankly, I was flabbergasted... How FAR will we go????



I didn't even KNOW there was offense in our nations flag... Although a teacher in a middle school art class in California’s Santa Rita School District  sees it differently...  When  a student was told not to draw Old Glory because it was “offensive,” but another student — in the same class – was praised for drawing a picture of President Obama.

Also, the five teens who were sent home for wearing shirts that had the AMERICAN flag on them... Since when is it NOT OK to wear the AMERICAN flag, in America?  Apparently since it was on May 5th, the day of a Regional Mexican Holiday known as Cinco De Mayo, they deemed it offensive to the high Mexican population.  I can understand respecting other's points of view, opinion, etc. But, quite frankly.. Almost EVERY day is some sort of holiday SOMEWHERE... Where will we draw the line?

Did I hibernate too long and miss something?

Our Flag? Really?  There's even a CODE for the flag.. hahahah

I am honestly a little disheartened right now, and a bit disappointed in what is happening with our country.  The diversity is quickly fading, and we are laying down and conforming. 
It is just SAD... No GOD, now no patriotism either??? So, tell me, WHAT are our children supposed to believe in besides, a clown, a big headed king, a Colonel and a red head in pig tails??? Oh YEAH... The BELL... cause obviously it's also offensive to wear our flag on a Mexican holiday.. hahahaha
What kind of country are we living in where we can't wear or draw the American Flag?  Do we know how many Americans sacrificed their life to protect that flag and what she represents?  Every morning my husband stands there and salutes our national ensign, I'm thankful to see it everyday.

Potato Crusted Halibut **

Ingredients

  • 1 1/2 cups extra-virgin olive oil
  • 6 garlic cloves, smashed
  • 1 thyme bundle
  • 2 bay leaves
  • 1 lemon, zest removed from the lemon with a vegetable peeler in wide strips
  • Pinch crushed red pepper flakes
  • 1 tablespoon fennel seeds
  • 3 Yukon gold potatoes, scrubbed
  • 4 (6-ounce) Pacific halibut fillets
  • Kosher salt

Directions

In a small saucepan over medium heat, combine the olive oil, garlic, thyme, bay leaves, lemon zest, crushed red pepper flakes and fennel seeds. Bring to a boil then turn the heat off and let it sit for at least 1 hour. (*Big tip: This can be done ahead and used for LOTS of different things.)
Cook's Note: In this case it is important to work quickly and to slice the potatoes for 1 halibut fillet at a time. We are NOT going to soak the potatoes in water, this will help them maintain their starch so they will stick to each other and to the fish, but could cause them to turn brown.
Using a mandolin, slice 1 potato extremely thin, (paper thin), in elongated rounds. Lay a piece of parchment paper on a clean, dry work surface. Arrange 3 potato slices in an overlapping vertical line pressing them together as you put them on the parchment. Repeat this process until you have a 4 by 6-inch overlapping potato rectangle that replicates fish scales. Brush the potato "scales" with the infused oil and sprinkle with salt. Season the halibut with salt. Lay the halibut fillet closer to 1 end of the potato rectangle than the other and then roll the fish up in the potato slices, using the parchment to help facilitate the rolling. Press to compact and really adhere the potatoes to the fish. Brush the outside of the potatoes with the infused oil to seal the potatoes and to prevent the potatoes from turning brown, this will also help make a nice tight "fish package". Reserve the fish in the refrigerator while preparing the remaining fillets. Refrigerate the fillets for at least 1 hour before cooking.


To cook the fish:


Add the infused olive oil to a large nonstick saute pan until the bottom is generously covered and bring the pan to a medium-high heat. Season the fish with salt and add to the pan. Cook the fish on both sides for 3 to 4 minutes frequently spooning the excess oil over the fish to "baste" it. The potatoes should be crispy golden brown and very well flavored and the fish will be succulent inside its crispy "scales".

Random Thoughts Tuesday: Weekend Update

We had an amazing weekend.  The weather was amazing, the company was extraordinary, and having a little mommy time was priceless...






Had the opportunity to see two movies, Death at a funeral which was H-I-L-A-R-I-O-U-S!!! absolutely loved the fact that it wasn't super stereotypical... We also saw Nightmare on Elm st.  Which would have been a great movie had the original Freddy come back and that Nancy chick could act. hahahaha

I'm tired of packing.. We've showed the house a few times and still on the fence on this whole renters thing... Man... 





Store PhotoI have been totally craving the Killer Ribs from This place... I am not one to rant and rave about a food joint, but we really liked this spot.. They were friendly, courteous... Family friendly, and the service was quick.. The food phenomenal, and we can't wait to go back..



Mother's day is coming, and I'm a little psyched... My hubby is the most thoughtful guy I know... also comes up with such amazing gifts... I'm a little excited, I admit...


A little boy was doing his math homework. He said to himself,'Two plus five, that son of a bitch is seven.  Three plus six, that son of a bitch is nine....His mother heard what he was saying and gasped, 'What are you doing?'
The little boy answered, 'I'm doing my math homework, Mom.'
'And this is how your teacher taught you to do it?' the mother asked.
'Yes,' he answered.
Infuriated, the mother asked the teacher the next day,
'What are you teaching my son in math?'
The teacher replied, 'Right now, we are learning addition.
The mother asked, 'And are you teaching them to say two plus two,
that son of a bitch is four?'

After the teacher stopped laughing, she answered, 'What I taught
them was, two plus two, THE SUM OF WHICH, is four.'
