Recipe:

Hot Wings:

INGREDIENTS

  • 12 chicken wings, split and tips discarded
  • 3 tablespoons butter, divided
  • 1/4 cup all-purpose flour
  • 1 tablespoon distilled white vinegar
  • 3 teaspoons hot pepper sauce
  • 1/4 teaspoon salt
  • 1/2 cup blue cheese salad dressing

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Melt 2 tablespoons butter in a 9x13 inch baking dish in preheated oven. Coat chicken with flour, shake off excess and place in dish.
  3. Bake uncovered in preheated oven for 20 minutes. Turn pieces and bake uncovered for another 20 to 25 minutes, or until chicken is cooked through and no longer pink inside when thickest pieces are cut in the center. Drain on paper toweling.
  4. In a small bowl combine the remaining 1 tablespoon butter, vinegar, pepper sauce and salt and mix until well blended. Add chicken and toss until evenly coated with mixture.
  5. Serve with blue cheese salad dressing.

Recipe:

Mini Empanadas:

RECIPE INGREDIENTS:

1 (15-ounce) box refrigerated piecrusts (two 9-inch crusts)
1/2 pound meatballs, cooked
1 (8-ounce) can tomato sauce
1/4 cup grated Parmesan cheese
Milk for glaze




1. To make a batch, first set out the crusts to bring them to room temperature (about 15 minutes) and heat the oven to 375 degrees. Meanwhile, cut the meatballs into small pieces, then place them in a small saucepan with the tomato sauce and simmer for 5 minutes. Let the mixture cool thoroughly.

2. One at a time, place each crust on lightly floured waxed paper and use a floured rolling pin to flatten it slightly into a 10-inch circle. Use a biscuit cutter to cut seven 4-inch circles from the dough, then reroll the dough scraps to get 3 more dough circles.

3. Spoon 1 tablespoon of filling onto half of each circle, leaving about a 1/2-inch margin at the edge, then sprinkle on about 1/2 teaspoon of Parmesan cheese. Use your fingertips to moisten the edges of the dough with water, then fold the uncovered half of the dough over the filling and press the edges together to seal. Crimp the edge with a fork, then transfer the turnovers to a lightly greased baking sheet and poke each one twice with a fork for vents. Brush each one with milk, then bake for about 25 minutes or until golden brown. Transfer to a rack to cool. Serve warm or at room temperature.

Quite frankly, I can't be happier that I did not have to watch a single game this season. With hubby gone, I just went about my business without having to guess what his mood will be like for the rest of the day depending on if his team won or lost.. hehehe so Sunday? it'll be church and maybe some shoppping for me and the girls..

Recipe:

Guacamole:

Ingredients

2 ripe avocados
½ red onion, minced (about 1/2 cup)
1-2 serrano chiles, stems and seeds removed, minced
2 tablespoons cilantro leaves, finely chopped
1 tablespoon of fresh lime or lemon juice
1/2 teaspoon coarse salt
A dash of freshly grated black pepper
1/2 ripe tomato, seeds and pulp removed, chopped


Method

1 Cut avocados in half. Remove seed. Scoop out avocado from the peel, put in a mixing bowl.

2 Using a fork, mash the avocado. Add the chopped onion, cilantro, lime or lemon, salt and pepper and mash some more. Chili peppers vary individually in their hotness. So, start with a half of one chili pepper and add to the guacamole to your desired degree of hotness. Be careful handling the peppers; wash your hands thoroughly after handling and do not touch your eyes or the area near your eyes with your hands for several hours.

3Refrigerate until ready.

****Keep the tomatoes separate until ready to serve.
****Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it.
****Many times I'll add sour cream for an extra creamy Guac...

Recipe:


Bruschetta :


Ingredients

  • 6 or 7 ripe plum tomatoes (about 1 1/2 lbs) diced
  • 4 cloves garlic, minced
  • 1 Tbsp extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 6-8 fresh basil leaves, chopped.
  • Salt and freshly ground black pepper to taste
  • 1 baguette French bread or similar Italian bread sliced
  • 1/4 cup olive oil

Method

  1. Make sure there is a top rack in place in your oven. Turn on the oven to 450°F to preheat.
  2. While the oven is heating, chop up the tomatoes finely. Put tomatoes, garlic, 1 Tbsp extra virgin olive oil, vinegar in a bowl and mix. Add the chopped basil. Add salt and pepper to taste.
  3. Slice the baguette on a diagonal about 1/2 inch thick slices. Coat one side of each slice with olive oil using a pastry brush. and sprinkle the other 2 cloves of finely chopped garlic.
  4. Place on a cooking sheet, . You will want to toast them in the top rack in your oven, so you may need to do these in batches depending on the size of your oven. Once the oven has reached 450°F, place a tray of bread slices in the oven on the top rack. Toast for 5-6 minutes, until the bread just begins to turn golden brown.
  5. Align the bread on a serving platter, olive oil side up. Either place the tomato topping in a bowl separately with a spoon for people to serve themselves over the bread, or place some topping on each slice of bread and serve. If you top each slice with the tomatoes, do it right before serving or the bread may get soggy.

****** Alternatively, you can toast the bread without coating it in olive oil first. Toast on a griddle for 1 minute on each side. Take a sharp knife and score each slice 3 times. Rub some garlic in the slices and drizzle half a teaspoon of olive oil on each slice. This is the more traditional method of making bruschetta.

I know I've mentioned before how ridiculously upset I've been with the system at the military hospital. The treatment is ridiculing, the wait time is uber long, it's nearly impossible to get an appointment, within a month's time, and they don't seem to feel that we deserve customer service since we have no choice. Well, my complaints finally paid off, after I found out they had the girls records all jumbled up with each others info, I put my foot down. So, we got the good news yesterday that we will now be seeing a civilian provider.... woohoo... I welcome walk ins...

Recipe:

Ceviche:


Ingredients

  • 2 lbs tilapia fillets or other firm white fish fillets, cubed
  • 8-10 garlic cloves, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons fresh cilantro, chopped
  • 1 habanero pepper, seeded and chopped
  • 8-12 limes, freshly squeezed and strained to remove pulp, enough to cover fish
  • 1 red onion, thinly sliced and rinsed

Directions

  1. Combine all ingredients except red onion and mix well.
  2. Place red onion on top and let it marinate in the refrigerator for at least 2-3 hours before serving.
  3. Before serving, mix well and serve with lettuce leaves, or sliced baggett.

**** I honestly have also used shrimp, instead of fish and have gotten a better reaction... and to offset the sour of the limes and the heat of the peppers, you may want to add a 1/2 cup of orange juice with no pulp...

Recipe:

Stromboli:

Ingredients
  • 2/3 c shredded part-skim mozzarella cheese .
  • 3 oz turkey pepperoni .
  • 2 roasted red peppers, sliced .
  • 3 oz prosciutto ham .
  • 1 (10 oz) can put in the fridge pizza dough

Directions
  • Step #1 Preheat oven to 375 & spray a cookie sheet with nonstick spray.
  • Step #2 On a lightly floured surface, press pizza dough into a 9x12 rectangle.
  • Step #3 Top with mozzarella, leaving a 1/2 to 1 inch border.
  • Step #4 Top with prosciutto, pepperoni & sliced roasted red peppers.
  • Step #5 Roll up jelly-roll style, seal the edges & place seam-side down on the baking sheet.
  • Step #6 Bake at 375 for about 25 mins or until golden.
  • Step #7 Serve with a side of warm marinara sauce for dipping.

** Again creativity is the key... I've made mine with mini meatballs instead of prosciutto and peperoni, I've also made it with cubed ham and cheddar.. Yummmmm ... You know your guests, and what they're into..

Where was it I saw that again?

This is merely a cheap attempt to plead for help.

While I was pregnant with the twins, I came across a very nice review for some children's t-shirts, that I fell in love with. Unfortunately, I didn't take advantage of them at the time, because, well, because I wasn't ready. I know I bookmarked the site, but I can't seem to find it.

These were extremely creative unique designs. The artist had created characters for, lets say children's misadventures.... For example, talking back, being messy, and others... each character was displayed on a shirt with a cutesy name.. I know I wish I had more info, but to be quite frank if I did, I probaly would have found them on google..

If anyone has any idea what the heck I'm talking about... Help a mommy out..

7 Layer Taco Dip:

Ingredients

  • 1 head lettuce (shredded)
  • 1 (16 ounce) jar salsa
  • 1 (16 ounce) package Cheddar Cheese (shredded)
  • * sometimes I cheat with a jar of premelted Queso..
  • 1 (med) container Sour Cream
  • 2 (1 1/4 ounce) packets taco seasoning
  • 1/2 lb. ground beef
  • 3 tomatoes (cubed)
  • 1 can refried beans

Directions


  1. Brown ground beef with the taco seasoning, set aside to cool.
  2. soften beans in microwave.
  3. spread it on the bottom of serving dish
  4. layer ground beef on top
  5. layer sour cream
  6. layer salsa
  7. layer cheese
  8. layer lettuce
  9. and finaly tomaotes.
  10. Serve with Tortilla Chips

**** be creative, there a million things that go on nachos... sometimes I'll add Guacamole, jalapenos on top, olives... depends...
